Broccoli and arugula soup

Ingredients for 4 servings:

  • 1 kg broccoli, fresh
  • 1 handful of arugula
  • 2 small onions
  • 2 cloves garlic
  • 1 liter vegetable broth
  • 50 g butter
  • 1 potato(s)
  • salt and pepper
  • Paprika powder
  • oregano

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash the broccoli and divide it into small florets. Finely chop the onion and sauté it with the broccoli and butter. When the onions are translucent, peel the garlic and press it in. Add the vegetable stock and simmer for about 20 minutes. Peel the potato and grate it into the pot. Then puree everything with a hand blender. Now add the spices. Finally, remove the stalks from the washed arugula and add it to the pot. Puree again and let it stand for a while.
