Broccoli and feta salad

Ingredients for 2 servings:

  • 1 broccoli
  • 125 g feta cheese
  • 50 g almonds, sliced
  • 4 tbsp olive oil
  • 1 tbsp mustard
  • ½ tbsp honey
  • 3 garlic cloves
  • 4 drops of balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 20 minutes

Divide the broccoli into florets and briefly cook in salted water until al dente. Dice the feta and add to the cooled broccoli. Make a dressing with olive oil, mustard, honey, crushed garlic, and balsamic vinegar and season with salt and pepper. Pour the thick dressing over the broccoli and feta, but do not stir it in. Roast the almonds in a dry pan until light brown and sprinkle over the salad.
