Broccoli and green spelt fritters

Ingredients for 3 servings:

  • 50 g green spelt, crushed or ground
  • 500 g broccoli
  • 1 onion(s)
  • 1 garlic clove(s)
  • 50 g oat flakes, wholegrain
  • 60 g wholemeal flour
  • 3 eggs
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

First, chop the broccoli into florets and peel the stalk. Add the onion and garlic clove to a blender and chop thoroughly until a creamy consistency is achieved. Add the oats, whole-wheat flour, green spelt flour, eggs, and the spices, and mix everything together again until a dough-like mass forms. Form 10-15 patties (I used a small baking dish about 3 cm deep) and then placed them on a baking sheet lined with parchment paper. Then bake the patties at approximately 230 degrees Celsius (convection oven or top/bottom heat) on the middle rack. Let them brown nicely, but not too dark, or they’ll be too dry. Served with a little salad and a delicious light dipping sauce.
