For the yeast dough, weigh out the flour, sugar, butter, and milk and knead them together with the egg, a pinch of salt, and the yeast (powder or yeast cubes – both work well) until you have a smooth dough. If you have a food processor, you can easily process the dough in it. After adding all the ingredients, simply let it knead for 4-5 minutes. If you’re using a hand mixer: It works just as well. However, here I mix all the ingredients into a dough (about 2-3 minutes with the mixer), then I remove everything from my mixing bowl and knead it again by hand. Finally, shape the dough into a ball and place it in a suitable dish or bowl to rise. Important: Choose a bowl with a lid so the dough will be nice and fluffy and let it rest in a warm place for about 30-40 minutes. I always place my bowl on the windowsill above my radiator; the dough feels very comfortable there and rises nicely. After the rising time is up, preheat the oven to approximately 175°C (fan oven). Line a baking sheet with parchment paper. Remove the dough from the bowl after it has risen and, depending on how you want to vary it, divide it into 2-4 pieces. This will yield approximately 2-3 rolls of each variety. If you want larger rolls or more, double the recipe. For variations, knead approximately 60g (depending on how much you want) of granulated sugar, dried fruit, raisins, and chocolate chips into each portion of dough. I divided the dough into 2 parts and used chocolate chips and raisins. Knead in the desired amount of each and vary as desired. Then roll the dough into a “sausage” and cut into equal pieces. Shape these into balls and flatten slightly. Place the rolls individually on the baking sheet lined with parchment paper – in a ring, as a heart, any shape is possible. Important: Brush the finished rolls with a mixture of egg yolk and 2-3 tablespoons of milk to ensure they turn a beautiful golden brown during baking. Now place the baking tray in the preheated oven and bake for about 25 minutes. Let cool and enjoy.
