Ingredients for 1 servings:

  • 100 g broccoli
  • 50 g potatoes
  • 150 ml water
  • 1 tbsp oil, neutral

Wash the broccoli and divide it into small florets. Peel thick stalks and cut into small pieces. Peel and wash the potatoes, and also cut them into small pieces. Place the potatoes in a small saucepan with about 150 ml of water, bring to a boil, then simmer on low heat with the lid closed for about 10 minutes. Add the broccoli and cook for another 10 minutes. Puree the potato and broccoli mixture with a hand blender until you get a light and fluffy puree, using the cooking water if possible. Stir in the oil. Allow the puree to cool to serving temperature. The puree can also be made in larger batches and frozen in portions. Other vegetables such as carrots, fennel, cauliflower, swede, or parsnip can be used instead of broccoli.
