Broccoli and vegetable casserole

Ingredients for 2 servings:

  • 1 head of broccoli
  • 1 bell pepper(s)
  • 3 m.-large mushrooms
  • 5 cherry tomatoes
  • 2 spring onions
  • 50 g Gouda, grated
  • 1 ball of mozzarella
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

low carb, vegetarian, for a casserole dish

Separate the broccoli florets and blanch them in salted water for about 3 minutes. Dice or slice the remaining vegetables and place everything in a baking dish. Mix in the Gouda and seasonings. Slice the mozzarella and scatter over the top. Bake in an oven preheated to 180°C (350°F) using top/bottom heat for 20 minutes.
