Broccoli and vegetable salad with feta

Ingredients for 4 servings:

  • 1 large broccoli
  • 100 g cocktail tomatoes
  • 10 tomatoes, semi-dried, in oil
  • 100 g feta cheese of your choice
  • 2 handfuls of baby spinach, fresh
  • 1 handful of fresh basil
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar, dark
  • some salt and pepper, black pepper, ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Cut the broccoli into small florets and steam in a steamer for 5 minutes until al dente, then let cool. Drain the semi-dried tomatoes and chop them, along with the fresh cherry tomatoes. Crumble the feta cheese with your hands. Cut the spinach and basil leaves into strips. Combine all ingredients in a large salad bowl. Add olive oil and balsamic vinegar and season with salt and pepper. This goes well with, for example, my quick garlic pizza bread, which can be found in my other recipes.
