Broccoli casserole

Ingredients for 2 servings:

  • 300 g broccoli, cut into florets
  • salt and pepper
  • 2 tbsp flour
  • 150 ml milk (1.5% fat)
  • 150 ml vegetable stock
  • Nutmeg, freshly grated
  • 50 g cheese (Gouda, 30% fat)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Wash the broccoli. Cook the broccoli florets in salted water for about 5 minutes. Meanwhile, stir the flour into some of the milk until smooth. Bring the remaining milk and vegetable stock to a boil in a saucepan, pour in the stirred flour, stirring constantly, and continue cooking until a creamy sauce forms. Season with salt, pepper, and nutmeg. Let the sauce cool slightly, then grate the cheese and stir in. Preheat the oven to 180 degrees Celsius. Remove the broccoli florets from the water, drain, and place in a greased baking dish. Pour the sauce over the top. Bake the casserole on the middle rack of the oven for about 30 minutes. Serve with pasta or mashed potatoes. 180 kcal per person, 5.6 g fat, 28% fat calories.
