Ingredients for 2 servings:
- 0.33 cucumber(s)
- 1 shallot(s)
- 2 garlic cloves
- 2 bell peppers, yellow
- 2 slices of toast
- 60 ml water
- 400 g yellow tomatoes
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- ¼ tsp turmeric
- 1 tsp lemon juice
- e.g. salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
First, peel the cucumber, quarter it, and remove the core. Then, peel and roughly dice the shallot and garlic. Also, clean and roughly dice the bell pepper, and soak the toast in the water. Now, add all ingredients, except for the pepper and salt, to a blender and blend until smooth. Season to taste with salt and pepper.
