Broccoli cream soup

Ingredients for 2 servings:

  • 400 ml water
  • 300 g broccoli
  • 100 ml cream
  • 1 tbsp cream cheese spread
  • salt and pepper
  • 4 tsp broth
  • nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the broccoli, cut into small florets, and then place it in a saucepan. Add 400 ml of water, bring the broccoli to a boil, and simmer for about 10 minutes. Drain, reserving the broth. Set aside about 6 florets and cut into pieces. Puree the remaining broccoli. Combine the reserved vegetable broth, the pureed broccoli, and the cream in a saucepan, mix well, and bring to a boil briefly. Season the soup with salt, pepper, nutmeg, and the broth. Stir in the cream cheese and simmer for another 5 minutes. Divide the chopped broccoli between 2 plates and pour the soup over it.
