Broccoli – Foam Soup
The perfect broccoli – foam soup recipe with a picture and simple step-by-step instructions.
- 1 Pc. Fresh broccoli
- 3 Pc. Peeled waxy potatoes
- 1 Pc. Diced onion
- 3 turns Chilli from the mill
- 1 Pc. Apple Elstar
- 100 ml Sparkling wine
- 700 ml Salted water
- 50 g Parsley root
- 80 g Hokkaido pumpkin
- 1 pinch Black pepper from the mill
- 1 pinch Freshly grated nutmeg
- 100 ml Liquid cream
- Clean, chop and wash the broccoli.
- Cut the potato into cubes.
- Put the potato and onion on top with water. Cook for about 10 minutes.
- Add the pumpkin and parsley root. Cook for another 5 minutes.
- Add broccoli and apple + spices. Remove a few florets from the broccoli after 2.5 minutes (I use it as an insert). Cook for another 2.5 minutes, then mix everything together.
- Add sparkling wine, switch off and heat for a moment.
- Now place a few pieces of florets in the plate, pour on the soup and refine with a little cream.
