Broccoli Gorgonzola Soup
The perfect broccoli gorgonzola soup recipe with a picture and simple step-by-step instructions.
as a topping:
- 2 tbsp Oil
- 1 bunch Spring onions
- 2 tsp Dried thyme
- 1 kg Frozen broccoli
- 1250 ml Hot vegetable broth
- 200 g Gorgonzola
- Salt pepper
- 1 Pc. Red chilli pepper
- 100 g Diced bacon
- 4 tbsp Sour cream or Sour cream
- Heat the oil in a large saucepan. Cut the spring onions into fine rings, finely chop the garlic and sweat both in the oil. Add the broccoli while still frozen and sauté briefly. Pour in the vegetable stock and bring to the boil.
- Roughly dice the cheese and add. Let the soup simmer for about 5 – 10 minutes on medium heat with the lid closed. Season with salt, pepper and thyme. Puree the soup to the desired consistency with the hand blender, then briefly bring to the boil again.
- To serve, sprinkle with a dollop of sour cream, a little crispy seared bacon and a little finely chopped chilli pepper. This fits z. B. baguette or ciabatta. You can of course vary the topping or leave it out entirely.
