Broccoli – porridge

Ingredients for 4 servings:

  • 500 g broccoli
  • 250 g potatoes
  • 50 g oat flakes
  • 75 ml apple juice
  • 5 tbsp oil (rapeseed oil)
  • ¼ liter of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and trim the broccoli and divide it into florets. Peel and dice the stalks. Wash, peel, and finely dice the potatoes. Heat 1/4 liter of water in a small saucepan. Cover and simmer the broccoli and potatoes for 15 minutes, until both are tender. Stir in the oats and bring to a boil, stirring constantly. Remove the porridge from the heat. Stir in the apple juice and rapeseed oil and blend until smooth. Freeze in portions.
