Broccoli sauce

Ingredients for 4 servings:

  • 2 heads of broccoli
  • ½ liter vegetable broth
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 tsp lemon juice
  • 2 egg yolks
  • 4 tbsp cream
  • 4 tbsp butter, cold
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Divide the broccoli into fine florets and blanch briefly. Make a roux with the 2 tablespoons of butter and the flour, then add the heated stock a spoonful at a time. Cook for 5 minutes, stirring constantly. Season with salt, pepper, and lemon juice. Whisk the egg yolks with the cream and stir into the sauce. Do not boil again. Whisk in the 2 tablespoons of cold butter, then add the broccoli florets and the sauce and mix well.
