Broccoli soup

Ingredients for 4 servings:

  • 500 g broccoli
  • 800 ml vegetable stock or vegetable broth
  • 1 stale roll
  • salt and pepper
  • 4 slices of bacon
  • some crème fraîche

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the broccoli and divide it into florets. Cook in vegetable broth or stock until soft. To thicken the soup, tear up the stale bread roll, add it, and cook until soft. Then puree. Season with vegetable broth or salt and pepper, if desired. Fry the bacon until crispy. To serve, add the bacon and a dollop of crème fraîche to the soup.
