Ingredients for 12 servings:
- 140 g butter
- 140 g sugar
- 2 pinches of salt
- 4 eggs
- 100 g chocolate, grated
- 50 g breadcrumbs
- 150 g almonds, ground
- 1 jar cherry(s) (morello cherries)
- Butter for the mold
- Breadcrumbs for the mold
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Drain the cherries thoroughly. Separate the eggs and beat the egg yolks with butter, sugar, and salt until frothy, then fold in the grated chocolate. Beat the egg whites with a pinch of salt until very stiff. Mix the breadcrumbs and ground almonds and stir into the butter mixture, then fold in the beaten egg whites. Pour the batter into a well-buttered 26cm springform pan dusted with breadcrumbs. Distribute the drained cherries over the batter. Bake the cake in the center of a preheated oven at 175°C (top/bottom heat) for about 60 minutes.
