Ingredients for 1 servings:
- 80 g baking cocoa
- 200 g butter, soft
- 100 g sugar
- 150 g brown sugar
- 1 packet of vanilla sugar
- 4 eggs
- 120 g flour
- 500 g low-fat curd cheese
- 500 g mascarpone
- 50 g sugar
- 1 packet of vanilla sugar
- some lemon juice
- 50 g whipped cream
- 1 pack of chocolate cream (chocolate mousse)
- Chocolate drops for sprinkling
- Fat and flour for the mold
Instructions
Working time approx. 45 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 10 minutes
For the brownie, grease and flour a 24 x 24 cm square springform pan or similar baking dish. Preheat the oven (electric oven 180°C, fan oven 160°C). Bring 150 ml of water to a boil in a small saucepan. Remove from the heat. Gradually dissolve the cocoa powder in the hot water with a whisk, stirring continuously until a smooth cream forms. In a mixing bowl, beat the butter, sugar, brown sugar, vanilla sugar and a pinch of salt with the whisk attachment of an electric mixer for 3-4 minutes until creamy. Beat in the eggs one at a time. Stir in the cocoa cream. Sift the flour over the chocolate mixture and fold in. Pour the batter into the pan and smooth it down. Bake the brownie in the hot oven for approx. 25 minutes. Don’t forget the skewer test! There should be moist crumbs sticking to the wooden skewer. Remove and let cool. For the quark cream, combine the quark, mascarpone, sugar, and vanilla sugar in a mixing bowl using the whisk attachment on a mixer for 1-2 minutes until creamy. For a fresh kick, add 1-2 teaspoons of lemon juice. Now it’s time to layer the cake: Spread 3/4 of the quark and mascarpone cream evenly over the brownie. Prepare the chocolate mousse according to the package instructions and spread it evenly over the cream layer. Whip the cream until stiff and fold into the remaining quark and mascarpone cream. Carefully spread this mixture over the chocolate mousse. Chill the brownie lasagna for at least 2-3 hours, preferably overnight. Sprinkle with chocolate chips before serving.
