Brownies with a lemon kick

Ingredients for 1 servings:

  • 200 g flour
  • 5 eggs
  • 300 g chocolate (semi-sweet)
  • 250 g sugar
  • 200 g butter
  • 1 pinch of salt
  • 50 ml oil (sunflower oil)
  • some lemon juice
  • 250 g powdered sugar

Melt the chocolate in a double boiler. Mix together the flour, eggs, sugar, butter, salt, and oil. Finally, stir in the melted chocolate. Pour the batter into a baking dish lined with baking paper and bake in a preheated oven at 180°C for about 20-25 minutes. While the brownie is baking, make a glaze from the powdered sugar and lemon juice. To do this, add the lemon juice a few drops to the powdered sugar and stir quickly with a fork or whisk until all the lumps have dissolved and a thick consistency is achieved. If you use too much lemon juice, simply add more powdered sugar. After baking, remove the brownie from the oven and use a thin skewer (e.g., a toothpick) to make small, deep holes all over the brownie. Spread a layer of glaze on the still-warm brownie. This layer will absorb into the warm batter! Let the brownie cool completely and then spread another layer of glaze on the cooled brownie. Allow this layer to set.
