Ingredients for 1 servings:

  • 10 tomatoes
  • 1 onion(s)
  • 4 garlic cloves
  • 3 tbsp olive oil
  • Parmesan, freshly grated
  • basil
  • Salt
  • pepper
  • possibly spice mix (bruschetta spice)
  • Baguette(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 30 minutes

Finely chop the tomatoes, preferably without the seeds, as they absorb a lot of water. Finely chop the onions. Mince the garlic. Finely chop the basil. Place everything in a bowl with the Parmesan cheese, spices, and olive oil. Mix and let stand. The mixture can also be made a day ahead, so it will be well-seasoned. Preheat oven to 180-200°C. Cut open the baguette (or a pre-baked baguette) and spread the mixture on the bread. Bake in the oven for about 10 minutes. Best served hot, but you can also eat the bread cold.
