Ingredients for 2 servings:

  • 1 ciabatta
  • 3 large tomatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 shot of oil
  • 1 shot of balsamic vinegar
  • some basil, fresh or frozen
  • 1 package of mozzarella
  • 1 slice(s) cream cheese (Gouda), if desired
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Dice the tomatoes and onions. Add the crushed garlic. Add a dash of oil and balsamic vinegar and season with salt and pepper. Finally, add some basil. Preheat the oven to 180°C (fan oven, top/bottom heat: 200°C). Then slice the ciabatta, drizzle with olive oil, and top with the diced tomatoes. Slice the cheese and place on top. Place on a baking sheet in the oven for 8 minutes. You can add the Gouda cheese to the mozzarella, but it’s not necessary. Since mozzarella doesn’t have as intense a flavor, it creates a good mix.
