Bruschetta shell pasta salad

Ingredients for 4 servings:

  • 500 g shell pasta or any other durum wheat pasta
  • 1 onion(s), red
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar, lighter
  • 4 tomatoes
  • some basil leaves
  • e.g. pickled cucumber(s)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

fruity pasta salad without heavy mayonnaise

Blanch the tomatoes in hot water, then rinse in cold water, peel, deseed, and dice into small pieces. Dice the onion and mix with the diced tomatoes. Add the vinegar, oil, and spices and mix thoroughly. Stir in the finely chopped basil. If desired, add finely diced gherkins. Cook the pasta until al dente. Rinse in cold water and, while still lukewarm, toss with the bruschetta mixture.
