Bruschetta with Gamberoni and Fagioli

Ingredients for 4 servings:

  • 8 slices of farmhouse bread
  • 150 g shrimp(s), (lobster crabs)
  • 1 can beans (borlotti beans)
  • 2 garlic cloves
  • 1 pepper, hot
  • 1 bunch parsley, picked leaves
  • Olive oil, extra virgin, cold squeezed
  • salt and pepper

Bruschetta with king prawns, beans and pepperoni

Clean and wash the king prawns, cut them open lengthwise, and remove the intestines. Drain the beans. Clean, peel, and finely chop the garlic. Thinly slice the peppers and finely chop the parsley. Fry the garlic, peppers, and parsley in a little olive oil in a pan. Add the king prawns and fry briefly, then remove from the pan and set aside. Add the beans to the pan, toss to coat, and heat well. Add the king prawns again and mix well. Season to taste with salt and pepper. Sear the farmhouse bread in a pan (tip: if you use a grill pan, the ridges will give your bread a striped effect) and arrange on a platter. Arrange the king prawns and beans on top and serve immediately.
