Watermelon bites with cucumber

Ingredients for 10 servings:

  • 10 cubes of watermelon(s), approx. 3 cm edge length
  • 60 g cucumber(s), finely diced
  • Spring onions, approx. 1 – 2
  • 1 tbsp chives
  • 1 tsp mint, cut into strips
  • 1 tsp lime juice, approx.
  • e.g. Fleur de Sel or coarse sea salt

Cut the watermelon into 2.5-3 cm cubes. Using a spoon or a melon baller, scoop out some of the flesh from the cubes to create small indentations. Finely chop or dice the white parts of 1-2 leeks. Finely dice or chop the cucumber. Finely chop the chives and finely strip the mint. Mix everything well in a small bowl with a little lime juice and spread it over the melon pieces. If you like, sprinkle a little coarse salt over the cucumber mixture just before serving. Leeks can be replaced with some chopped red onion.
