Bubble Tea

Ingredients for 5 servings:

  • 50 g tapioca pearls
  • 450 ml water
  • 50 g sugar
  • 50 g cane sugar
  • 100 ml water
  • 15 g tea (jasmine or other green/black tea)
  • n. B. ice cubes
  • possibly milk

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Asian dessert with tapioca

Bring 450 ml of water to a boil. Add the tapioca pearls. Boil for 15 minutes. Transfer to a sieve and rinse until the liquid drips out. Meanwhile, mix the sugar with the remaining water and boil until the sugar has dissolved. Place the pearls in a bowl and pour over some of the syrup. Let stand for a while to sweeten the starch. Brew the tea in a tea strainer with enough water; for jasmine tea, remove the strainer after about 2 minutes. Place a spoonful of the pearls in a lidded mug, add the tea and syrup. Add a little ice to cool the mixture. Add milk, if desired, and shake until frothy. Serve with a thick straw.
