gluten-free, delicious, simple, not too sweet, something different

Mix buckwheat flour with starch and baking powder. Beat eggs with sugar, a pinch of salt, and softened butter until frothy. First stir in the milk, then add the flour mixture. Let it rest for about 15 minutes. Grease the waffle iron with a little butter and bake in batches until golden brown. The buckwheat waffles are soft, not too sweet, and have a slightly nutty flavor. They go very well with apple compote or whipped cream with fresh fruit or jam. I use this batter in a heart-shaped waffle iron to make 8-10 waffles.
