Buffalo mince Asia style

Ingredients for 4 servings:

  • 500 g minced meat (buffalo mince)
  • 300 g Chinese cabbage
  • 400 g bell pepper(s), red or yellow
  • 1 bunch of spring onions, red
  • 20 g ginger
  • 2 garlic cloves
  • 2 handfuls of baby spinach
  • 40 ml soy sauce, thin, light
  • 2 tsp hoisin paste
  • 2 tsp honey or agave syrup
  • 2 tsp rice vinegar
  • Chili powder, optional
  • salt and pepper
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Heat the oil in a wok or large frying pan and fry the minced meat until lightly browned. Slice the spring onions into rings, slice the bell peppers into strips, and sauté both. Season with salt and pepper, and add chili powder if desired. Finely dice the garlic and fresh ginger and add them as well. Mix the soy sauce, hoi sin paste, honey, and rice vinegar together, pour over the minced meat and vegetable mixture, and bring to a boil briefly. Stir in the spinach leaves. Enjoy as a low-carb version or with rice or rice noodles. Alternatively, you can use ground beef.
