Ingredients for 4 servings:

  • 250 g bulgur
  • 750 ml vegetable stock
  • ½ cucumber(s)
  • 2 peppers, red and yellow
  • 1 onion(s)
  • 1 tomato(s)
  • 200 g feta cheese
  • 1 bunch of flat-leaf parsley
  • 1 lemon(s)
  • oil
  • salt and pepper
  • n. B. Olives, black

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Briefly bring the bulgur to a boil in the broth and remove from the heat. Cover and let it swell. In the meantime, dice the bell pepper, tomato, onion, cucumber, and feta cheese. Finely chop the parsley. Mix the cooled bulgur with the vegetables. Season to taste with lemon juice, oil, salt, and pepper. Stir in the black olives, if desired.
