Ingredients for 2 servings:
- 1 cup bulgur
- 2 carrots
- 1 small zucchini
- ½ cup peas, frozen
- vegetable broth
- salt and pepper
- Parsley, coriander and/or mint, optional
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes
bland diet
Prepare the bulgur according to the package instructions and then let it cool. Peel the carrots and wash the zucchini. Cut both into small cubes or strips. Cook with the peas in a little oil. Stir the vegetables into the bulgur along with a little broth and season with salt and pepper. If desired, stir in fresh herbs such as parsley, mint, or coriander.
