Ingredients for 4 servings:
- 2 small spring onions, finely chopped
- 1 small zucchini, thinly sliced
- 1 bell pepper(s), roughly diced
- 2 tbsp olive oil
- 2 garlic cloves, finely chopped
- 1 can cherry tomatoes, chopped
- 2 large beef tomatoes, diced
- 1 can tuna, in its own juice
- g feta cheese, diced
- ½ cup bulgur
- 1 cup water
- some herbs (herbs of Provence)
- herbal salt
- pepper, black
- Thyme
- 2 eggs, hard-boiled and peeled, chopped
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Sauté the spring onions in a large pan in 2 tablespoons of oil. Add the bell peppers and zucchini and fry briefly. Meanwhile, prepare the beefsteak tomatoes and garlic. Add the tomatoes, tuna, garlic, bulgur, and water. Simmer for about 10 minutes over medium heat, then add the feta and eggs and stir. Season to taste and simmer briefly.
