Ingredients for 2 servings:
- 150 g bulgur
- 2 tbsp olive oil
- 200 ml vegetable stock
- 200 g tomatoes
- 1 onion(s)
- 1 clove(s) garlic
- 200 g zucchini
- 100 g carrot(s)
- salt and pepper
- nutmeg
- 1 tbsp ajvar

Low in calories and delicious
Place the bulgur in a sieve, rinse with cold water, and drain well. Peel the onion and garlic and fry briefly in a little oil with the ajvar in a pan. Wash the tomatoes and roughly chop them. Peel the zucchini and carrots and cut them into small cubes. Add the bulgur and vegetables to the pan with the onions, pour in the vegetable stock, and simmer for 25 minutes, stirring frequently. Season with salt, pepper, and nutmeg.
