Burgenland bean strudel

Ingredients for 5 servings:

  • 1 gr. can/n beans
  • 1 handful of bread rolls, diced
  • e.g. breadcrumbs
  • some butter
  • 2 eggs
  • 250 ml sour cream
  • salt and pepper
  • Parsley
  • optional spice(s) of your choice
  • 2 packs of strudel sheets or puff pastry
  • 1 egg(s) for brushing

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Drain the beans. Toast the breadcrumbs and breadcrumbs, if using, in a little butter. Beat the two eggs and mix with the beans, breadcrumbs, and the remaining ingredients. Season to taste. Roll out the strudel or puff pastry and spread the filling on top. Roll up the strudel and brush with egg. Bake in the oven at 200°C (400°F) on the middle rack for about 45 minutes, until the strudel is a beautiful golden brown. Serve with a cucumber salad (with cream and yogurt) or yogurt sauce.
