Ingredients for 1 servings:

  • 900 g wheat flour type 550
  • 63 g fresh yeast
  • 2 tsp sugar
  • 300 ml milk
  • 150 ml olive oil
  • 4 egg whites
  • 2 tsp salt
  • 4 egg yolks
  • 2 tbsp milk

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes

Put the flour in a bowl and make a well in the center. Add the yeast, sugar, and about 2 tablespoons of milk. Cover with a little flour and mix to form a small ball. Let rest, covered, for about 10 minutes. Then add the oil, egg white, salt, and the remaining milk and knead for 10 minutes until you have a smooth dough. Place the dough back in the floured bowl, cover, and place in the oven preheated to 50°C (top/bottom heat) for about 30 minutes. Remove the dough from the bowl and knead well. Then form the dough into nine balls and place them on a baking sheet. Flatten the balls slightly with your hand. Cover and place back in the oven at 50°C (top/bottom heat) for about 30 minutes. Finally, whisk together the egg yolk and milk and brush the rolls with it. Sprinkle sesame seeds on top, if desired. Bake in an oven preheated to 200 °C top/bottom heat for approx. 20 – 25 minutes on the middle shelf.
