Dissolve the fresh yeast in the warm water. Then add the remaining ingredients and knead the dough with a food processor on a low speed for about 3 minutes until you have a nice dough. Then knead the dough with the food processor on a higher speed for another 5 minutes to allow the gluten structures to develop properly. Cover the dough with a kitchen towel and let it rise for an hour. Divide the dough into 10 roughly equal-sized pieces and carefully knead them into a ball, pressing the sides inwards as you go. This ensures that the buns rise nicely. Place the dough pieces on baking sheets, gently flatten them, and cover and let rise for another 30 minutes. Bake the buns at 180°C fan oven for 15 to 20 minutes, depending on the desired degree of browning. Immediately after baking, brush the buns with melted butter while they are still hot and then let them cool.
