Ingredients for 4 servings:
- 4 burger buns
- 800 g minced meat, mixed
- 200g bacon
- 1 jar cranberries
- 4 slices of soft goat cheese, e.g. Camembert
- 1 pack of walnut kernels, approx. 200 g
- 100 ml honey
- 100 ml barbecue sauce, e.g. honey mustard
- 100 ml sauce (burger sauce)

Don’t be put off by the ingredients. It might look a bit jumbled at first, but it all comes together really well and creates an interesting texture in your mouth. The amount of ground meat can of course be varied as desired, if you want larger or smaller burgers. With the ingredients described, you can also get 5-6 patties if you don’t want them to be too big. For patties of around 150-250g, chop the bacon into small pieces. Crumble or chop two handfuls of walnuts in your hand. Mix the ground meat with the bacon, barbecue sauce, honey, and about half of the walnuts. The easiest way to do this is with a food processor. The dough should be uniform and smooth. Form 4-6 patties from the dough. These should be as flat as possible, as the patties will shrink in the pan and then become too high. The easiest way is to place the raw patties on cling film, place a second layer of film on top, and flatten the meat firmly with a board or your hand. Now the timing becomes important. It’s a good idea to have at least two pans available. Cut the burger buns in half and lightly toast them in a pan over medium heat for 1-2 minutes. This prevents the buns from becoming too soggy. Don’t let them burn or become too dry. Toast the other side as well. At the same time, fry the patties with or without oil over high heat for about 2-3 minutes on each side until medium or well done; the time depends on the thickness of the patties. Just before the patties are done, cut the goat’s camembert in half crosswise (diameter approximately the size of the patty) and fry briefly on both sides in the pan so that it melts and warms up. Spread the burger sauce on the bottom and top halves of the bun. This makes everything a little juicier and holds everything together better. Sprinkle the remaining walnuts on the bottom half of the bun. Place the patty on top. Add the hot goat cheese and 2-3 teaspoons of cranberries to the goat cheese. Place the bun lid on top.
