Preheat the oven to fan-assisted cooking and a top-medium grill setting. Trim the leeks and trim off the top ends. Once the oven is hot, grill the leeks in the upper third of the oven until dark to blackened. Turn the leeks occasionally to ensure even color. This will take about 10 to 20 minutes, depending on their thickness. Remove the leeks from the oven and let them cool briefly. Peel off the outer black leaves. Tips: If the leeks become too black, you’ll need to peel a little more. So it’s okay if you leave the leeks in the oven for a moment. Ventilate well while grilling! The smell can be very burning and pungent and could set off a fire alarm. Alternatively, if you have a gas stove, simply grill the leeks over the gas flame. Note: This cooking method comes from Levantine cuisine, where the smoky flavor is a very popular ingredient.
