delicious recipe for coffee lovers, simple and vegan
Heat the coffee, 200 ml of oat cream, hot chocolate, vanilla sugar, and sugar in a saucepan, but do not allow it to boil. Dissolve the cornstarch in the remaining 50 ml of oat cream. Add this mixture to the pan with a splash of rum and stir well. Let the pudding boil for 2-3 minutes, stirring constantly, until it thickens. Then pour the pudding into four small bowls or molds and let it rest in the refrigerator for about 6 hours or until completely cold. Before serving, drizzle the pudding with coffee liqueur. Tips: Garnish with toppings such as coconut cream, nuts, chocolate sprinkles, or other desired ingredients, if desired. A non-vegan version should also work. Instead of coffee liqueur, rum or amaretto can also be used for the drizzle. The pudding can be garnished in many ways, for example with whipped cream, fresh fruit, or crumbled biscuits for additional texture and flavor.
