Burnt Semolina Soup
The perfect burnt semolina soup recipe with a picture and simple step-by-step instructions.
- 3 tbsp Butter
- 8 tbsp Semolina
- 1 Egg
- 100 ml Milk lukewarm
- Freshly grated nutmeg
- Salt
- Black pepper from the mill
- 700 ml Vegetable broth
- 1 tbsp Freshly chopped parsley
- Sugar
- Whisk half of the semolina with the egg and milk and let it swell. Season the mixture with salt, sugar, pepper and nutmeg.
- Brown the other half in a saucepan with butter – deglaze with the vegetable stock and stir in the egg and semolina mixture – bring to the boil, let it soak for 5 minutes and season with salt, pepper and parsley.
- A quick warming soup just before the holidays to leave room for the festive excess 😉
