Burnt Semolina Soup

The perfect burnt semolina soup recipe with a picture and simple step-by-step instructions.

  • 3 tbsp Butter
  • 8 tbsp Semolina
  • 1 Egg
  • 100 ml Milk lukewarm
  • Freshly grated nutmeg
  • Salt
  • Black pepper from the mill
  • 700 ml Vegetable broth
  • 1 tbsp Freshly chopped parsley
  • Sugar
  1. Whisk half of the semolina with the egg and milk and let it swell. Season the mixture with salt, sugar, pepper and nutmeg.
  2. Brown the other half in a saucepan with butter – deglaze with the vegetable stock and stir in the egg and semolina mixture – bring to the boil, let it soak for 5 minutes and season with salt, pepper and parsley.
  3. A quick warming soup just before the holidays to leave room for the festive excess 😉
