Butcher-style meat sausage

Ingredients for 4 servings:

  • 1 ring/s of meat sausage
  • 4 eggs, hard-boiled
  • 4 tomatoes
  • 2 onions, red
  • 1 bunch of parsley
  • Salt
  • black pepper
  • 6 tbsp oil (salad oil)
  • 4 tbsp vinegar
  • ½ tbsp mustard, hot
  • 4 tbsp water
  • possibly Maggi

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the skin off the sausage and cut the ring in half (this makes it easier to work with), then cut the sausage into thin slices (almost, but not quite through). The slices should still be about 4-5 mm thick at the bottom. Next, cut the eggs and tomatoes into thin slices and alternately sandwich the slices between the sausage slices. Finely chop the parsley and onion and sprinkle over the sausage. Mix the remaining ingredients to taste to make a strong, spicy marinade and spread it over the sausage. The marinade should be allowed to soak in for at least 30 minutes, during which time spoon the sauce over the sausage frequently. Tastes delicious on hot days.
