Ingredients for 4 servings:
- 120 g flour
- 40 g butter
- 3 eggs
- 30 g Parmesan
- 125 ml milk or water
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Bring the butter and milk or water to a boil, add the flour all at once, stir, and let it simmer until the dough comes away from the spoon. Then transfer the dough to a bowl and gradually stir in the eggs and grated Parmesan cheese. Scoop out small dumplings with a spoon and place them in the soup in a wide casserole dish. Let them rest gently for 4-5 minutes.
