Eggnog buttermilk muffins

Ingredients for 1 servings:

  • 100 g flour
  • ½ pack of vanilla pudding powder
  • 50 g sugar
  • 50 ml oil or melted butter
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 75 ml buttermilk
  • 75 ml egg liqueur
  • 1 egg(s)
  • 2 tbsp applesauce
  • 1 pinch of salt

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

First, combine the flour with the baking powder, pudding powder, baking soda, sugar, vanilla sugar, and salt and set aside. In another bowl, combine the melted butter or oil, applesauce, egg, egg liqueur, and buttermilk. Sprinkle in the flour mixture and mix briefly (until the dry ingredients are moistened). Pour the mixture into the muffin tin and bake in a preheated oven at 180°C (top/bottom heat) for about 20 minutes. This makes about 7 medium or 10 small muffins; I always fill the cases 3/4 full! They’re very light and moist and easy to make!
