Ingredients for 3 servings:

  • 3 eggs
  • 200 g sugar
  • 50 g water
  • 500 g butter, in flakes
  • possibly cognac
  • optional spice(s) of your choice

Working time approx. 30 minutes; Total time approx. 30 minutes

Cream for filling cakes

Whisk the eggs from cold until light and fluffy. Then heat the water to 100°C and stir in the sugar until it’s completely dissolved. Now it gets tricky: Let the sugar water cool slightly to about 60°C and then slowly pour it into the egg mixture. Stir everything while cold and then gradually add butter flakes until the mixture thickens. The mixture can be flavored to your liking, for example with cognac, orange essence, etc. When the cream is ready, simply spread it over the cake base.
