Ingredients for 12 servings:

  • 1 egg(s)
  • 150 g sugar
  • 1 pinch of salt
  • 90 g milk
  • 40 g butter
  • 1 tbsp vanilla sugar
  • 250 g butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the egg, sugar, salt, milk, butter, and vanilla sugar in a saucepan and bring to a boil, stirring constantly. Chill. Cream the butter until fluffy and stir in the custard. To prevent curdling, refrigerate the butter and custard so everything is at the same temperature. I always use Rama instead of butter; it tastes just as good and doesn’t have as much cholesterol. Tip: Instead of vanilla sugar, I cook with a scraped-out vanilla pod. Or I cook with two teaspoons of instant coffee, which makes a mocha cream; or with a spoonful of cocoa or a piece of chocolate coating, the cream becomes a chocolate cream!
