Ingredients for 1 servings:
- 40 g cornstarch
- 3 egg yolks
- 80 g sugar
- 500 ml milk
- 1 vanilla pod(s)

Pastry cream
Whisk together the cornstarch, egg yolks, sugar, and half of the cold milk. Bring the remaining milk to a boil and add the stirred cornstarch. Whisk the cream well, returning it to a boil, until smooth. For a lighter texture, beat two egg whites until stiff and gently fold them into the lukewarm cream. Variations are possible with vanilla pod, coffee, or chocolate, or fold in 1/4 liter of whipped cream.
