Ingredients for 1 servings:

  • 500 g flour (whole wheat flour)
  • 100 g oat flakes (grained)
  • 1 sachet of yeast (dry yeast)
  • 250 ml buttermilk
  • 100 g quark (low-fat quark)
  • 2 tsp salt
  • 40 g butter
  • 30 g sesame or linseed or fried onions

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

In a bowl, combine the flour, oats, yeast, and slightly warmed buttermilk. Add the low-fat quark, salt, softened butter, and seeds. Knead the dough thoroughly until smooth. Then let it rise in a warm place until doubled in size. Form the dough into two loaves, brush with water, and sprinkle with oats. Bake the loaves in a preheated oven at 180°C for 50 minutes.
