Buttermilk bread

Ingredients for 6 servings:

  • 200 g wheat bran
  • 175 g flour (wheat flour, type 1050)
  • 125 g oat flakes
  • 250 ml buttermilk
  • 1 cube of yeast
  • 1 tsp sugar
  • 100 g quark (low-fat quark)
  • 2 tsp salt
  • Spice(s) as desired, e.g. caraway

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Combine the cracked wheat, flour, and oats and make a well in the center. Heat the buttermilk. Combine the yeast, sugar, and 2 tablespoons of buttermilk. Pour into the well. Let it rise for 15 minutes. Then add the remaining buttermilk, low-fat curd cheese, salt, and spices. Knead everything together and let it rise for 30 minutes. Form a loaf of bread and brush with lukewarm water. If desired, sprinkle with oats and bake for 45-50 minutes at 200-220°C.
