Buttermilk cake

Ingredients for 10 servings:

  • 2 cups sugar
  • 4 cups flour
  • 2 cups buttermilk
  • 2 eggs
  • 2 packets of baking powder
  • 1 packet of vanilla sugar
  • 1 cup of sweet cream
  • 2 cups desiccated coconut

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

Preheat oven to 175°C (165°C fan/gas mark 3). Beat one cup of sugar with the two eggs until frothy. Add the buttermilk. Mix the flour with the baking powder and stir everything into the buttermilk mixture. Immediately spread the batter on a roasting pan. Mix the desiccated coconut with the remaining sugar and spread it over the cake. Bake for about 20 minutes until golden brown. The surface should not overcook. Remove the finished cake from the oven and immediately drizzle with the cream. Let the cake rest for a day.
