Buttermilk cake with coconut

Ingredients for 1 servings:

  • 4 cups flour
  • 3 cups sugar
  • 2 cups buttermilk
  • 3 eggs
  • 1 packet of baking powder
  • 2 cups desiccated coconut
  • 1 cup sugar
  • 2 cups of cream

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Make a batter from the sugar, buttermilk, flour, eggs, and baking powder. Pour into a springform pan. Mix the coconut flakes and sugar and spread over the batter. Bake the cake at 175 degrees Celsius (top and bottom heat) for 20-30 minutes. Once the cake comes out of the oven, spread the two cups of cream evenly over the top and let it soak in. Tip: If you use regular coffee cups, the batter will be enough for a springform pan. If you use coffee pots, the batter will be enough for a baking sheet.
