Buttermilk Coconut Muffins

Ingredients for 1 servings:

  • 500 g flour
  • 250 ml buttermilk
  • 125 g butter, liquid
  • 3 eggs, size L
  • 220 g sugar
  • 1 baking powder
  • 100 g desiccated coconut
  • some liqueur, coconut
  • 1 pinch of salt
  • possibly chocolate flakes
  • possibly liqueur, rum
  • possibly fruits

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Beat the sugar, salt, and eggs until very fluffy. Add the butter. Combine the flour and baking powder and fold in. Stir in the buttermilk. Stir in the coconut flakes and coconut liqueur. Pour the batter into a greased muffin tin or paper baking cups and bake in a preheated oven at 170°C fan/convection oven (190°C top/bottom heat) for 15-20 minutes. I use this as a basic muffin recipe without the coconut flakes and coconut liqueur. You can also fold in chocolate shavings, rum liqueur, or fruit, depending on your taste.
