Buttermilk mousse

Ingredients for 6 servings:

  • 500 ml buttermilk
  • 125 g powdered sugar
  • 2 lemon(s), the juice
  • 6 sheets of gelatin
  • 2 cups of sweet cream
  • 1 jar morello cherries, already thickened (alternatively pureed raspberries or strawberries)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Allow the gelatin to swell in the lemon juice, then warm it slightly and dissolve it. Combine the buttermilk with the powdered sugar and stir in the gelatin mixture. Allow to set slightly, then whip the cream until stiff and fold in. Spread the thickened morello cherries or pureed raspberries or strawberries over the stiff cream. Let it set in the refrigerator until ready to serve.
