Ingredients for 1 servings:
- 250 g flour
- 150 g cornstarch OR
- 4 packs of pudding powder, vanilla
- 25 g vanilla sugar (approx. 3 packets)
- 200 g sugar
- 3 eggs
- 1 pinch of salt
- 350 ml buttermilk
- 3 tsp baking powder
- 1 tsp baking soda
- 750 g plum(s)
- e.g. cinnamon
- some butter-vanilla flavoring OR
- 1 vanilla pod(s), the pulp

In a bowl, mix the flour with the cornstarch or pudding powder, baking powder, and baking soda. Set aside. Halve the plums and remove the stones. Set aside briefly. In a large bowl, beat the eggs with a pinch of salt, the vanilla sugar, vanilla extract or seeds from one vanilla pod, and the sugar until light and creamy. (This may take up to 5 minutes, depending on the power of the appliance.) Now add the buttermilk and the flour mixture, if possible at the same time, and beat on the lowest speed until the flour is well blended and there are no lumps. Now pour the batter into a well-greased or parchment-lined baking tray and smooth it out as evenly as possible. Distribute the plums on top as desired. If you like, you can also add a little cinnamon, but this is not necessary. Place the baking tray on the middle rack of the preheated oven. Bake for 25-30 minutes at 180°C (top/bottom heat) or 165°C (fan oven). Since every oven heats differently, it is very important to do the first skewer test after about 20 minutes. If there is still batter sticking to the cake, the cake needs to bake longer. The cake is only ready when no more batter sticks to the skewer. After baking, let the cake rest for 15 minutes in the slightly open oven, only then take it out and let it cool down. If you like, you can glaze the cake or dust it with powdered sugar. The buttermilk makes the cake super moist and light despite the lack of fat. It has a delicate vanilla flavor. If you don’t like it too sweet, you can reduce the amount of sugar. The cake also tastes great with apples as a substitute. You can also combine plums and apples, but it also tastes very good with other types of fruit! It keeps fresh for several days without drying out.
